A fun way to enjoy your veggies... Secrets of great Spring/Summer rolls are to use the freshest ingredients available, to moisten the rice-paper wrappers until they are pliable but not too wet, and to roll the bundles tightly. The beauty of spring rolls is that you can add just about any ingredients you would like. Vegetables should be either lightly steamed or saut̩ed and sliced into thin slivers. If you are using cellophane noodles, it works best to break them in half before cooking so they are not too long. Fresh herbs are wonderful to use in spring rolls as well. The trick is to wrap the veggies as tightly as you can, and keep all the ingredients long so they don't fall out. Size: 22 cm. (81/2") Machine made and dried. Shelf stable. One 12 oz pack has about 30 sheet of rice papers. Easy to prepare. Just wet and use. Soften rice paper by quick evenly dipping in cold or warm water for 5-10 seconds. Lay flat on a plate.
