EVERYDAY PANCAKES

1/4 Cup (35g) Country Sunrise All Purpose Baking Flour
1 1/2 TBS (14g) Country Sunrise Scrambled Egg and Omelet Mix
1 1/2 tsp Sugar
1/8 tsp Salt
1/8 tsp Vanilla extract (optional)
1/2 tsp Baking Powder
1/3 Cup  Vance's Darifree (reconstituted) or Rice Dream
2 1/2 tsp Melted Butter/margerine

Heat griddle or skillet over medium heat  (about 375 deg.)

Mix dry ingredients in medium size bowl, then add wet ingredients and wisk with a fork until batter is well mixed.
Pour  1/3 cup batter onto hot skillet. for each pancake.  Cook pancake until tops are bubbly and edges are dry  and  puffed.  Turn and cook other side until golden brown.  Do not press down with spatula.
Enjoy !

YIELD: 2 Pancakes about  4" in size.

BANANA PANCAKES

1/4 Cup (35g)  Country Sunrise All Purpose Baking Flour
1 1/2 TBS (14g)  Country Sunrise Scrambled Egg and Omelet Mix
2 tsp Brown sugar
2 tsp Oil
1 tsp Baking powder
1/8 tsp Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon
1 ripe Banana
1/4 cup Water

Preheat greased skillet  (about 300 deg)
Smash banana well with fork in medium bowl.  Add the remaining ingredients to the bowl with  banana. Stir  with fork just until all ingredients are mixed, do not over mix.
Immediately measure 1/3 c batter onto skillet per pancake.

YIELD:2 Pancakes about 4" in size.
PHE: 28mg per pancake.
